This recipe comes from my Nephew Joey who specializes in healthy gourmet recipes. This is a different take on the traditional pizza! Its packed with protein and tastes absolutely fantastic. Makes for a great meal on a Friday night
Left over grilled chicken breast (Or one cooked 4 ounce chicken breast)
For this grilled pizza I like to use naan bread but any flat bread will do. Take your left over chicken breast (Or cooked chicken breast) and cut it into strips, slice your tomato, and remove the basil leaves from the stem.
Place your slices of tomatoes on top of the flat bread. Place your strips of chicken on top of the tomatoes and your fresh basil leaves on top of the chicken. Sprinkle with a little bit of Parmesan cheese and then cover with mozzarella and cook on grill until cheese is melted. Keep on burner on hi and the other two burners off. Keep pizza on burner furthest away from te heat. 15 minutes or until cheese is melted.
Makes one small pizza – One serving
